THAI CHICKEN SOUP RECIPE

Serves 4

Per Serving—

Calories: 428 Fat: 29g Protein: 27g Carbs: 18g

Ingredients

● 1 Tbs. red curry paste

● 1 1/2 C unsweetened coconut milk

● 1 C low-sodium chicken stock

● 1 Tbs. fish sauce

● 1 Tbs. raw honey

● 2 Tbs. natural peanut butter

● 10.5 oz. cooked, sliced chicken breasts (14 oz. raw)

● 1 C sliced red bell pepper

● 1/2 C thin-sliced yellow onion

● 1 C peeled, chopped carrots

● 2 tsp. fresh, grated ginger

● Lime wedge

● Cilantro for garnish

Directions

  1. Place curry paste, coconut milk, chicken stock, fish sauce, honey, and peanut butter in a stockpot and whisk together until well combined.
  2. Add chicken, red bell peppers, onions, carrots, and ginger. Cover and cook on low for six hours or on high for four hours.
  3. Top each serving with lime juice and cilantro.
  4. Serve immediately.
