How Do You Prepare Lettuce For Wraps?

We prefer iceberg lettuce for these keto taco shells, so we’ll start there. First, you’ll want to remove the core of the head of lettuce and then run the entire head under cool water. Gently use your fingers to spread the lettuce leaves apart without tearing them so they each get clean. Then, if you have a salad spinner, you can then put the whole head of iceberg lettuce into it and give it a good spin. Once you’ve removed it, you can begin peeling each leaf of lettuce back, careful not to rip it, until you’ve removed enough for the number of keto taco lettuce wraps you’ll be making.

If you’re using another lettuce for your wraps, such as romaine or butter lettuce, you can wash under cool water and then shake to partly dry it. Then peel back each leaf and lay on a paper towel to soak up any remaining water until ready to use.

You can even prep the lettuce shells for these keto turkey tacos in advance by storing them in a paper towel-lined plastic bag in the refrigerator for up to a week, making this meal—and life!—that much easier.

Turkey Taco Lettuce Wraps INGREDIENTS:

  • 1 tablespoon olive oil
  • 3/4 cup chopped yellow onion
  • 1.3 lbs 99% lean ground turkey
  • 2 minced garlic cloves
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • Romaine lettuce leaves

Turkey Taco Lettuce Wraps INSTRUCTIONS:

  1. Heat your skillet or pan over medium heat and add the olive oil.
  2. Add the turkey, cooking until the meat starts to brown—about 10-15 minutes.
  3. In a separate bowl, mix together the chili powder, cumin, paprika, minced garlic, salt, and black pepper.
  4. Add this seasoning and the chopped onion to the turkey, and cook for another 10 minutes.
  5. Let the turkey mixture cool a bit before wrapping in lettuce leaves and serve with extra toppings.
