Tips for Grilling Skirt Steak

Skirt steak is a very thin cut of beef, so while you can customize the cooking to a variety of levels of doneness, it is recommended to be served medium-rare to medium to ensure it remains tender. It cooks very quickly on a hot grill and usually requires between 3-5 minutes per side. When removing the skirt steak from the grill, let it rest for five minutes before serving.

Why Is My Skirt Steak Tough and Chewy?

Skirt steak is cut from the diaphragm muscles of the animal which does give it the ability to become tougher meat if it is overcooked, so keep an eye on your timer! There is also a chemical method to keeping the steak more tender, which would be to marinate the meat either for several hours or overnight. This process assists in breaking down some of the meat fibers. Alternatively, you can use a meat tenderizer on the steak or score the top and bottom of the steak with a sharp knife. When serving, be sure to cut the steak against the grain.
