Stir Fry Recipe:

Single Serving:

4-oz chicken breast cut into thin strips

4-oz broccoli florets

1 clove garlic (minced)

2 tsp. olive oil (divided)


For the sauce:

1 T soy sauce

1 T rice wine vinegar

1 packet of Truvia or Splenda

½ tsp. red pepper flakes


In a medium sized bowl, whisk together the sauce ingredients.

Heat a large wok or high sided pan over high heat. Add 1 tsp. olive oil.

Add the chicken to the wok and cook until the chicken is cooked through, about 5-6 minutes. Remove the chicken to a plate.

Add the remaining olive oil to the wok or pan, and then add in the garlic. Cook for a minute, or until fragrant. Add in the broccoli. Cook until bright in color or just crisp cooked, about 1-2 minutes.

Add in the cooked chicken and sauce. Cook for 30 seconds until the chicken and broccoli are coated.

Plate and enjoy!
